The Sunstrum
On 26 September 2023, AVM Curiosities created a bespoke canapé and cocktail menu for the London Mithraeum Bloomberg SPACE in response to the current exhibition by Pamela Phatsimo Sunstrum. As part of the event, this recipe was created, which commemorates some of the many adventurous chapters of Pamela Sunstrum’s life. It celebrates ingredients from all around the globe: chamomile from Asia, cinnamon from Sri Lanka and cloves from Africa - all places that the artist has lived. Sunstrum was born in Botswana, but travelled across different continents with her family throughout her childhood and later as part of her artistic journey. The cocktail itself is based on a Botswanan spiced tea and uses a South African sweet orange marmalade called ‘All Gold’ instead of cocktail syrup.
Ingredients:
50ml Bain's Cape Mountain Whisky
1tsp ‘All Gold’ marmalade
125ml Tea mixer (recipe below)
Dried Orange garnish
Method:
Mix the whisky with a teaspoon of marmalade in the bottom of a tumbler.
Add ice, and top with the tea mixture (approx. 125ml)
Stir again before garnishing with a dried orange slice.
Tea Mixer | Ingredients:
1.5L Water
4 Chamomile tea bags
4 Whole cloves
1 Cinnamon stick
4-6 tsp Caster Sugar (depending on your own sweet tooth)
Tea Mixer | Method:
Put 1.5L of boiling water in a saucepan
Add the tea bags, cloves, cinnamon and sugar
Boil until reduced to 1L (15-20 mins)
Sieve and set aside to cool (3 hours)
Makes enough tea mixer for up to 8 cocktails
